Ingredients
- A whole chicken (3 to 4 lbs), cut into pieces or 3 lbs chicken thighs
- 1/2 cup white wine
- 3 bay leaves
- 1 tsp black pepper
- 1 tsp salt
- 4 tablespoons olive oil
- 1 medium sized onion
- 2 or 3 shallots
- 2 medium potatoes
- 1 inch piece ginger
- 5 cloves of garlic
- 1 teaspoon turmeric powder
- 1/2 teaspoon chili powder
- 2 teaspoon Madras curry powder
- Or
- 1/2 teaspoon cumin powder
- 1/4 teaspoon cinnamon powder
- 1/4 teaspoon nutmeg powder
Instructions
Marinate chicken for about 15 – 20 minutes. Meanwhile, chop the potatoes, carrots, and other aromatics.
Preheat oven to 200°C.
Heat casserole with olive oil, pan fry the chicken (skin side down) for about 8 – 10 minutes, or until both sides turn golden brown. Set aside.
Use the remaining oil to sauté the onions, shallots, garlic and bay leaves for about 3 minutes or until fragrant.
Add in the curry powder, tomatoes, and tomato paste, and sauté for about 10 minutes or until the tomatoes are soft and mushed.
Add in the carrots and potatoes, and 2 cups of water. Boil for 10 – 15 minutes until the carrots and potatoes are soft.
